Kapo Klica
Kapo is a more informal version of Kiseki with the chef facing forward to the diner sitting down in front of you. How far out are we from Kapo becoming a thing in the States? Well, it's funny you should ask. I am buying a hell of a lot of stock. That is the stock that I am buying the most is Kapo Klica. The ones that I've seen in Kyoto, not big. There's usually eight seats and we have four or five tables. Some Kapo cuisine is very intimate as well.
