Chlorophyl is that green pigment that makes plants have their characteristic grain color. It absorbs sunlight and contributes to photo synthesis. So i wouldn't be surprised if green coffee beans have some of those pigments in them, and they are soluble in water. If you scrunch up leaves and then put water in them, the water will turn slightly green. That's very cool.
