Most champagnes are the product of wines from different years created from different grapes picked in different vineyards. The three grape varieties are pinonoir, pinomene and chardena. A great mystery of blending is that nobody knows why certain blends produce something entirely new. Oxford psychologist charles spence has an evolutionary hypothesis. He thinks some of the volatile compounds that produce smell carry a message for our brains. And hence there may be differences between those volatiles that give rise to pleasant or neutral response and those components which give rise to an eversive or a danger response.
