The Importance of Sausage

I love meat, but can't stand the thought of those horrible orange sausages. So I just put in my kids' wine with the sausage. Now it's a hot onion half sandwich. Nitrate nitrite free doesn't taste as good though. And we have the lines and again, how bad could just the juice be? We do like the essence of the oil.
