Simon armitage has done a new translation of sir gawaine and the green knight. We know when it was written, and we know pretty well where it was written. The english language has changed a great deal since the roman invasion in 54 b c. There's actually quite a lot of different words, and there's different pronunciations. And even to this day, you have pubs which say, ye oldy black bull.
