What's the Worst Thing About the Convection Oven?

We got this giant convection oven for the guys to bake in and it was really important to the schedule that they had. It shows up on Friday during the prelight and it's run via propane. I've got matching burn marks on both of my forearms as a video on it. We did talk about without a recipe, but we did not give it up to Rachel who ran the entire production. She knocked it out of the park for very long days with lots and lots of moving pieces and she crushed it.
