There's a place in Tokyo that specializes in treating raw coffee as if it was a fine wine. "I took a sip, and at that point, I was reminded of the fact that the primary reason that we can taste things is to stop us eating things that might kill us," he says. So yes, raw coffee should absolutely 100% not be aged. But yeah, it gets kind of silly really quickly.
