What Is the Difference Between a Natural Wine and a Conventional Wine?

Borgele nouva went so overboard and using this one yeast that became identifiable, like artificial banana taste. That same yeast was used to make most bougeles nouva. People associate that taste with game. On a hot summer day or at the end of a rich meal game is just what i want to drink. For me, what i look for in a wine is something more complex. I like acid. I like mineral. I like something that is expressing a place, is expressing the terarr where the wine is from.
