In week two of the glucose goddess method, we introduce vinegar once a day to our diet before the meal that's highest in starches and sugars. Vinegar contains a molecule called acetic acid, which helps reduce the spike of a meal. Acetic acid acts on alpha amylase, which is the enzyme that breaks down starches into glucose in your body. And second, acetic acid goes to your muscles and tells your muscles to soak up extra glucose as it arrives in your bloodstream. So with the addition of vinegar once aday, you can still eat whatever you're eating, but with less of that creation of the glucose roller coaster.
