How Do You Smell a Sweet?

In everyday life, you're almost never a hardly ever smell individual molecules. Even your ordinary things like coffee, wine, tea contains hundreds of aromatic molecules. It's the combination of these molecules called odourants that matters. Smell is a contrast of scents, it tries to figure out when something has changed. So if you've got a cliff edge of something nasty and something nice, it probably amplifies what's nice. Some olfactory scientists kind of like to make jokes about that, that certain perfumes stink of poo - quite literally.
