Pork but steak is one of those things that divides people. I think almost unanimously, people find it to be flavorful because all the sinew, muscle, fibre and fat. But if you cook it like a steak, you're not cooking it long enough where you're breaking down those structures. So that's how you get that's braised or slow roastrato, where it falls off the bone.
