I think it's important to have a point of view on things. One thing is about selling what you're doing, right? And i guess the commercial aspect of it, ecause one thing i learned early on when i was a line cook, is that in the end, you have to pay the bills somehow,. An to make rigt, have to pay your people f to carry people. It's put out of the product. Ather's the whole business of food. But from a stylistic standpoint, you always, always feel as strong point of view as necessary. There's the subtle ways to do that and then there's the obvious ways to doThat. I respect tradition
