Apfs snapshot diffs is a very efficient way to find out what has changed the problem. There's nothing like SMB doesn't know about apfs SMB there's no like wire like ZFS had a protocol where you could send snapshot diffs as a byte stream. I still have hope that it can get better over time But and it has gotten a little bit faster over time but the iOthrattling is the biggest culprit right now.
