The Power of Git in the Software World

Git is predicated on code always being text-based, right? Not encapsulated in whatever binary format or even bespoke XML. So I wonder how easy it is to translate the approach that software engineers are fortunate enough to be able to use into other domains. You can think of it as kind of a hub-and-spoke model where we're kind of have the input layer converting everything into git and then at the end, we have this visual layer.
