Why Landa Kills Van Hamer?
The movie needs us to see him as a vicious person right before the ends that were like reminded like, we need to hate him. He doesn't subscribe to a set of morals outside himself. When he is removed from society, I.E. in this private room that no one can see, he becomes a hawk or a wolf or whatever. It's because she's the only one who knows all sides and any surviving bastards are gonna get blown up.
