How to Tasting a Wine

Once malactics complete and you've given the wines a little bit of time to rest, now is about the time where you feel like, okay, I can start seeing what the wine the character will be. Tim and I will usually taste each lot barrel by barrel throughout the aging process. If it's like, oh, this barrel's strangely getting oxidized and the rest of the lot isn't, we may sulfur that one. We need the rest for exhaustion from harvest. It's every, and everyone's best interest to just let them, let them sleep for a minute. And so while this isn't frequent, occasionally we will need to spot sulfur one barrel.
