The freshness and the strains we use are next level. We managed to work with some Dutch growers who were probably a decade ahead of anybody else. The fact that no one else was around, which I wasn't sure whether there was an opportunity or for good reason. This is a long, low ceiling room and these metal racks are laden with, look like logs. And out of those man-made logs are tiny mushrooms and then they get bigger and bigger mushrooms. So if I snapped one off and ate it, can I do that? Yeah, you can. I'll cut it off.
