What Is Stajing?

Stajing is a large scale system of illegal free labor that fine dining restaurants use the backbone of their economic model. A cook will go into a restaurant and work a service, maybe a full service, maybe for a few hours. The chefs and cooks are just monitoring them and seeing like how their skills are. And then they decide if they want to hire them or not. How do y'all feel about Yelp? What about it? I'm going to call right now on whether or not we should burn it to the ground or try and let them modernize. That's like giving them like five, six years. Let's see what kind of stuff is going to be.
