How Can We Really Have an Ecosystem Cuisine Today?

Historical examples where cuisine evolved to support an ecosystem like the Spanish dehaysa or the Carolina rice kitchen, they all have one important thing in common. But those constraints really don't exist in the US anymore. Farmers can add fertilizer to poor soil and in New York it's cheaper to buy veggies from California than from upstate. We move around a lot more than those historical people did too so we don't have that lifelong relationship between the landscape we live in and the food we grew up eating.
