I was surprised that they used, as you said, tuna and lamb for that reason. I don't know why you would take risks with the actual choice of ingredients if the execution is so finicky. This struck me as like just poor planning on their part. It felt a little bit like a kiss of death to me because that usually almost never loads well. But I also, in a beef Wellington challenge, I wouldn't pick them necessarily to win that challenge.
