The Challenges of Catering to a Small Society

I don't feel like I'm in any way in a position to kind of preach because, to be honest, we cater to a very small part of society who can afford to come and stay. We're fumbling our way to try and find what we think is a happy medium. But it's easier said than done. It's so complex, the conversation. And you can't quite simply say that, oh, actually, a 25 quid chicken provides people value when there are people that might have to spend 25 quid on a weekly shop. So I do think it is. It's a real challenge. And I don't have the answers.
