Flash freezing is just when you use like liquid nitrogen or something to freeze something much faster than you could by just sticking it into the freezer. This results in teeny tiny little ice crystals that are less likely to perforate cell walls and make things sort of gummy and brown. Is it just for ginger and garlic? Probably. Horse radish.
