The Probability Enters Because of Our Ignorance, Not Because of Some Fundamental Things

A quantum system has correlations between many different parts of it that are just absent classically. You don't have enough information when you understand the whole state to understand the state of every single particle within that system. And that leads to the intrinsic, of course, complexity of quantum systems. There can be much more information stored in such systems than you can access just by measuring the whole system itself.
