The Impact of Different Types of Foods in China

Shao Bo recently published a study that looks at the environmental impacts of different types of staple foods in China. When they started analyzing the greenhouse gas emissions of various staples they found that the potato came out way ahead. For instance the greenhouse gas intensity for producing potato roughly is around 0.5 to 0.7 kilogram carbon dioxide per kilogram potato and for the wheat so which is in the ballpark with the potato but for rice which almost doubles this greenhouse gas emission intensity.
