The reason that you stop growing is because the supply of energy, your metabolism, is scaling sublinearly. And a sublinear behavior can't keep up with the linear growth, what is being demanded. So the system stops, it doesn't grow anymore, it just reaches a stable configuration and that's who you are in maturity.
