The American gut project has been looking at what is the ideal gut flora look like of a human. An ideal gut that's in touch with its ecosystem includes fungi, yeast, protozoa and all these other organisms. The American gut in contrast has 10,000 species at best, typically more than 5,000 to 8,000 species. We've lost 75% as Western consumers, Western eaters.
