Allspice - The Spice of Life
Allspice or Pimento is a valuable product from Jamaica which combines the flavor of clothes, cinnamon and nutmeg. The berries are picked unripe although fully grown; after picking they are dried in the sun or in kilns until dark brown then separated from stalk. All spice yields volatile oil by distillation, used as a flavoring in alcoholic solution. A green-fixed oil has the burning aromatic taste of pimento and is supposed to be the accurate principle.
