Elizany: I'd sub out the meat ragu with a mushroom ragu, which is really good and get some great wild mushrooms. Jet: Kabocha squash will not collapse if you give it a little bit of structure. Elizany: You can do them ahead of time a day before and actually re-warm them,. bring them back up to like 165 if you do that.
