How to Cook Wok Hay at Home?

Wok hay is an ethereal smokiness that you get from the combination of oil in a wok with an extremely high heat under it. It's hard to replicate at home, but there is a simple work around: drizzling and caramelizing sauce. The solution we came up with was to take your sauce, in this case, a combination of fish sauce, tamarind, oyster sauce, soy sauce, and drizzle it down the edge of the pan. When you do that, it reduces and, hence, concentrates its flavors, but it also caramelizes the sugars in that sauce.
