How Do Full Keel Boats Track?

The skag is a directional, you know, component of the boat mounted well aft. Modern style halls tend to be either sailing upwind or downwind, but rarely across the wind because there's very little tracking. The critical criteria of a haul is how it tracks and when you really need directional stability, you really need it. When you're sailing in a fin and spade rudder boat that has no ability to track, you're giving up a lot in leeway.
