How to Prevent E. Coli From Happening Again

732 confirmed cases of E. coli traced back to Jack in the box restaurants across Washington, Idaho and Nevada. In 1993, federal regulations for cooking beef were at 140 degrees Fahrenheit, 60 degrees Celsius. The state law was actually 155 degrees, 68.3 degrees Celsius. This regulation was put in place by the same epidemiologist John Kobayashi that I mentioned earlier. He chose 155 degrees because that was the temperature required to kill E. coli. A lot of the cases probably could have been prevented if they had followed Washington state law.
