The Classic Possum Versus Opossum

Possums are a cool, sort of evolutionary throwback to very, very ancient times when we were pangea. They fed native americans and early settlers. Many enslaved people used to eat possums on plantations where they were sometimes allowed to do their own hunting,. So possums became a major food source within the black community during slave like many kinds of southern and soul food eating. The traditional method was to roast the possum in a pan with sweet potatoes - it's supposed to be a good substitute for pork. But this method didn't deter even the most esteemed diners.
