The Importance of Calories
A food calorie is the amount of energy it takes to raise one liter of water, one degree Celsius at sea level. It's calculated by something using a bomb calorimeter and that's where you put in a piece of desiccated food desiccated because water doesn't have any caloric content per se for human beings.
