The French Pot Process for Ice Cream
The federal government defines what ice cream is. It must have no more than 50% air, which means it can have 10% butter fat. Even the super premium brands like Hagan Daz and Ben and Jerry's still have some air in them. All of it has some air whipped into it because of this process for making it.
