How to Wash Yeast

You want to capture the yeast pretty much as soon as the beer is done fermenting. There's a big difference in what you're going to collect if you let it sit there for two weeks. You don't necessarily have to rack it, but there's still some benefit for clarity and things that are racking a beer. washing the yeast is kind of another old practice that I really don't feel is necessary anymore. But we write about it. And it's fine.
