The History of Ethnic Food

Krishnanu got interested in the history of ethnic food when he noticed that most workers in the restaurant industry were immigrants or foreign born. Krishnanu: You see a pattern where immigrants are central to feeding Americans from almost the very first moment we have census data. This broad and imprecise category of quote unquote ethnic food first emerged in the 1960s and really started to go out of fashion in 2010. But food writers and tastemakers have been discussing the idea of immigrants or foreign food long before the term ethnic food arose.
