Restaurants Are Not a Movie
There's probably 20 to 25 restaurants that are opening up in New York City, just New York City right now from first time chefs and restaurateurs. If we don't give them the right opportunity, they may not get the shot to do it right. So like, that's why I was like, we need people to be a lot more like patient. A restaurant's not a movie. You're not getting the finished artifact on opening night. "I want this restaurant to fucking pummel and destroy," he says.
