There's not a lot of sort of beginner material. It's also very hard to find junior level Elixir positions. What I usually tell people is like, I don't really care which language you start with, but make sure it's a popular one. And then, you know, you can take these skills and you can transfer another language. But like really, starting with Elixir is tough.
