White flour and white bread aren't recent technological innovations in and of themselves. Industrial bakers chose white bread as their flagship bread because for them, white was a marker of cleanliness and modernity. Food reformers of the day referring to the white loaf as a chaste loaf and the dark loaf as a defiled loaf. And bread was actually never a real vector for contagion.
