Sarah Francis used to own the checkers a restaurant she set up with her partner, fellow chef Stefan, and sister Catherine in Montgomery Wales. We wanted to create a classical French restaurant in mid-wales on a budget. You should be within months you'd received a Michelin star, no mean feat. And yet eight years later you gave up your star. Looking back, I wish we'd relaxed and enjoyed it more. That accolade from that guide was a game changer really for us,. just putting us on a map.
