How to Cook Green Leafy Salads

I love that idea of steaming them, then putting them maybe on a cooking sheet with mixed parchment paper. Then you take like a glass and then push it down. So I've used so, you know, I'm a chef so I do have my own little mallets. And then you get this actually really nice thick bite, but you know, rather than leave it that way you just toss it in toss it in some nice spices and avocado and roasted up in the oven.
