The Heat Capacity of Water
The amount of energy it takes to change the temperature of water, changes depending on how hot the water is. So when you put the pan on first and it's tepid, it takes a lot of energy to change its temperature. But what do you get up to? Boiling. And i guess also, if you walk out into somewhere really hot, you don't immediately boil. Ic is, i think, handy for life.
