i think we do need to shift our expect tions about the value of food. And that's a big point. There are very low cost parts of every animal, and those cuts are not only equally in even more nutritious than whir tases - they're much tastier. i've actually, as i returned to meat eating in the last couple of years, i've, for the first time, really started working on learning how to brace meat,. That long, slow, low temperature cooking is my favorite ind of meat.
