The Spirit of a Dead Woman
In the film, after gawayne gets away from the bandits, he takes shelter in a cottage. But while he is sleeping there, he then encounters a spectral appearance of a young woman. And this young woman gives him a task, a quest, you could say, to dive down to a spring fed pond and retrieve her head. So we learn that she is, in fact, the spirit of a dead woman who was beheaded.
