The Black Pepper Character in Cool Climate Charades
The Australian Wine Research Institute is trying to understand the flavour of black pepper in wine. The institute has developed a special nose that can detect rotundone, an ingredient in black peppercorns. It was overlooked at 13,000 times higher concentration than what they found in the wines.
