If a brewer's yeast is programmed to produce an odor from a rose, you can just let that yeast grow up in a tank and feed it sugar. Now we can do that stuff on demand. We now have an on-demand, sustainable way to make a specific molecule to spec as opposed to relying on the complexity of the agricultural supply chain.
