Spaniard firm produces traditional iberian ham from pigs fed on acorns. They have trained workers whose specific job exclusively is to smell the hams. One man sniffs three thousand, 200 times a day - that's one sniff every nine seconds. Some people will be qualified to sniff some types of ham, but not others.
