Elia's Coffees - A New Meal
Diego has been helping Elia's to make the coffees more interesting without adding too much ferment flavor. More interesting means picking at the right time and not experimenting so much with things in fermentation. They call it cherry fermentation, but it's just like the cherries are in the hopper for 12 hours. It's pretty cold so it's not a lot of fermentation. And then they ferment 24 hours and then wash. So we will start posting them in the new year.
