I think that this simple answer is that life is cells. Because life is what? Cells. So it's a particular kind of principle that we have discovered to exist in nature. You could say that there are probably other things in the universe that are cell-like and life-like. And you could also call them life. But eventually it's just a willingness to find an agreement of how to use the terms.
