Lentils, peas and barley wheat have dried seeds that can be stored for up to a year. For other sort of political reasons, wheat and barley were used as a way to pay taxes. So on a lot of levels, even though the early harvesting and our early relationship to the grass seeds seems a little unlikely, we're attracted to these this food source that stores well,. And we have worked out ways to produce all sorts of food stuffs that are incorporated into our quisine.
